Top high school scientist focuses on enzymes in fruits

The top winner of the 2022 Territorial Science Fair, Faasao Marist High School sophomore, Princess Jazelle Viesca, hopes her research can help people with their food intake.

Her project was on determining at what stage enzymes in bananas and pineapples work the best in breaking down food that you eat.

Princess says that ripe bananas contain the highest amylase activity, another common digestive enzyme. Amylase activity in bananas increase as it transitions from unripe to ripe and decreases as it enters its overripe stage.

Second place was Kelly Liang of Pacific Horizon and third place was Georgia Cox also of Pacific Horizon.
